Strawberries, Grapes, Apples...Oh My!

In the interest of my health & to mix things up nutritionally, once a week, I will be doing to do a fruit and veggies only day.

This will not be an easy task for me at all! I will have to say goodbye to my daily bowl of oatmeal, my high fiber bread, yogurt & cheese. YIKES!

And unless I find out that sweet potato is a veggie...I'll have to give that up too. Drats.

Thankfully, I'm not one of those folks that have a general dislike for fruits & veggies...yes...there ARE folks out there like that!

Strawberries, cantaloupes, apples, kiwifruit, spinach, broccoli, grapes and such are staples in my no problem there.

Not sure how breakfast is going to work. Salads are fine for lunch and dinner. Guessing this where my creativity & resourcefulness will come into play.

I recently tasted boiled edamame [soy beans] ..and yes...they were tasty!
More on edamame.

I am going to begin this on 3.27.08. I will continue this for a month..ending on 4.24.08.

I will update my progress after the month. Wish me luck!
